Carbonic maceration Hondarrabi zuri in stainless steel tank. A spontaneous fermentation with the indigenous yeasts takes place. The selection of a grape of good acidity and perfect health that allows an intracellular fermentation between 10-15 days before its pressing. The subsequent aging is based on the type of grape: 600 barrel, stainless tank or white clay jar.
